<abstract> <p>Vegetable oils are among the foodstuffs produced and consumed in abundance by population Burkina Faso. These edible nutrient sources for health. However, oxidation of is a phenomenon that leads to their degradation. Hence, objectives this study were determine antioxidants compounds, evaluate antioxidant activity vegetable Faso propose good manufacturing practices. Thus, 32 samples crude peanut refined cottonseed analyzed. α-Tocopherol was determined High performance liquid chromatography (HPLC), total phenolic compounds DPPH spectrophotometry. The α-tocopherol averages 10.89 56.44 mg/100 g oils, respectively (<italic>p</italic> < 0.05).
